Banana pie



Banana pie


Base

250 g packet biscuits, roughly crushed
45 ml butter melted or oil
50 gm peanut roasted

Steps

Process biscuit pieces in a food processor until fine crumbs form add peanut . Add butter or oil process to combine. Press firmly into base and sides of a 22cm fluted flan pan with removable base. Chill at least 30 minutes, until firm.

Topping

100 ml carton thickened cream, chilled
1 tbsp icing sugar
1 tsp vanilla extract
300 gm ripe bananas
1 egg
2 tbls cornflour

Steps

Blend egg, milk, sugar, vanilla and cornflour till smooth pour to the base, bake till done and move to upper side heating element brown on top
